Make This Sambal Stuffed Mackerel Fish For A Rice Clearing Meal

When it comes to Asian families, it is not an actual meal when there is no rice on the table. You could rotate different dishes throughout the week, but nothing can replace a bowl of white rice. While some of you may start to get tired of eating rice, here is something simple that’ll make your meal more appetising. This time around, we will be sharing a delicious sambal stuffed mackerel fish that rings a nostalgic Nyonya taste.

Ingredients (A)

  • 10 red chilies
  • 10 dried chilies
  • 20g of garlic
  • 200g of red onion
  • 20g of ginger
  • 2 teaspoon of belacan

Ingredients (B)

  • 5 kaffir lime leaves
  • Some sugar
  • Some salt
  • 6 tablespoon of vegetable oil
  • Mackerel fish

Step 1: Clean the mackerel fish and cut a deep slit along the backbone. Put this aside and prepare the kaffir lime leaves by cutting them into thin strips.

Step 2: Blend all the ingredients in A and put aside.

Step 3: Pour oil into a heated pan and add in the blended ingredients. Then, add some sugar and salt according to your taste. On low heat, stir constantly until aromatic and becomes a paste.

Step 4: Add in the kaffir lime leaves and mix well.

Step 5: Using a spoon, stuff the sambal paste into the slit on the fish. Then, fill the pan with oil and deep fry the fish until it is cooked.
