  • 2 kg Mee Kuning
  • 3 cloves of garlic (julienned)
  • 4 onion (julienned)
  • 4 stems of water spinach (roughly chopped)
  • 1 block of hard tofu (diced ad fried)
  • 1 tomato (diced)
  • 60g of chicken fillet (diced) or prawns
  • 1 bowl of beansprouts
  • 1 cup of dried chili paste (Cili boh)
  • 2 tbsp of tomato sauce
  • 1 tbsp of dark soy sauce
  • 1 tbsp of soy sauce
  • Sugar to taste
  • Salt to taste
  • Some cooking oil

Garnish:

  • Red Chilli (julienned)
  • Scallion (julienned)
  • Crispy fried onion
  • Lime
Preparations:
1. Stir fry 1/4 garlic, 1/4 onion, and dried chili paste until you can see a layer of oil on top of the sambal. Add in some sugar and salt and put aside.
2. Heat up the wok and stir fry the rest of the onion and garlic until you can smell the aroma. Throw in the prawn or chicken and keep on stirring until it is cooked.
3. Pour in water spinach, tofu, and tomato. Stir for a while before adding in the noodles, beansprout, tomato sauce, soy sauce, and sambal that we have prepared earlier.
4. Keep on stirring until it is 3/4 cooked. Push the noodles to the sides of the wok and add in a little bit more oil.
5. Break the eggs into the oil and scramble them. When the egg is partially cooked, combine and stir it together with the noodles. Garnish it and you are done!
