Here’s How To Make A No-Bake Lotus Biscoff Cheesecake For All Cheesecake Lovers

Hello Foodies! Everyone’s timeline possibly has at least one post about Lotus Biscoff Cheesecake. It’s not new in Malaysia since the Lotus Biscoff spread is available in certain supermarkets. If you’re keen on the taste, this is your chance to try to make it at home. The easy and creamy no-bake dessert will blow your tastebuds away!

The Lotus Biscoff spread is made of speculoos cookies that are turned into a thick spread with the addition of sugar, vegetable oil, and other all-natural ingredients. The spread is smooth and creamy, with a deep brown sugar, butter, and spice flavours to it. Well, now you know what Biscoff is, imagine making them into a cheesecake! For an 8” tin you’ll need: ⁣

Ingredients  (Biscuit Base)

Biscoff biscuits ⁣(250g)
Unsalted butter ⁣(120g)

Ingredients (Cheesecake filling) ⁣
White Chocolate⁣ (200g)
Full-Fat Cream Cheese⁣ (500g)
Icing Sugar⁣ (75g)
Vanilla⁣ (1 Teaspoon)
Double Cream⁣ (300 ml)
Biscoff Spread⁣ (200g)

Step 1: Blitz/crush the biscuits and mix in the melted butter. Press firmly into the bottom of the tin. ⁣

Step 2: Melt the white chocolate until smooth and leave to cool for 10 minutes.⁣

Step 3: Whisk together the cream cheese, icing sugar, and vanilla until smooth.⁣ Add the melted chocolate and whisk. Then, add in the double cream and whisk again until thick. ⁣

Step 4: Dollop in the biscoff spread and fold through the cream (don’t mix as you want it to swirl through).

Step 5: Spread the cream mixture evenly onto the biscuit base and leave to set in the refrigerator for at least 8 hours (or preferably overnight)⁣.

Step 6: For the decoration, you can do anything you like. You can melt some Lotus Biscoff spread and pour it over the cheesecake. Then add dollops of melted white chocolate and swirl it through using a toothpick before refrigerating again to set.⁣
