Ingredients
- 3 eggs
- 25g of sugar
- 55g of milk
- 65g of cake flour
- Few drops of lemon juice
- 9 small strips of aluminium foil
Step 1: Prepare a large strip of aluminium foil and cut it into 9 long pieces. Then combine both ends of the strip together and this will be your mold.
Step 2: In two clean and dry bowls, separate the egg white and yolks.
Step 3: In a different bowl, sieve the cake flour and add in the milk and egg yolk. Stir the mixture together until it is combined and smooth.
Step 4: Back to the egg whites, add a few drops of lemon juice and 1/3 of the sugar. Beat until it is combined and add the remaining sugar. Continue to beat until the mixture has stiff peaks.
Step 5: Add 1/3 of the egg white mixture into the egg yolk mixture and gently fold it together. Continue to add the remaining egg white mixture and fold until it is combined. Once completed, pour the mixture into a piping bag.
Step 6: Prepare a heated pan at low heat and place the aluminium foil molds. Using the piping bag, squeeze the mixture in the molds and fill to 90%. Then, add two tablespoons of water and close the lid for 5 minutes.
Step 7: After waiting for 5 minutes, open the lid. Flip the cakes to the other side and add another 2 tablespoons of water.
Step 8: Close the lid for 6 minutes. Then, allow the cakes to cool before removing the aluminium foil. Dust with some powdered sugar and it’s done!
