With Hari Raya fast approaching, we will inevitably think about the feast that comes with it. Although open houses are not encouraged this year, there’s one other element that makes Raya full of vibes. We’re talking about Kuih Raya. Indulging in jars after jars of Kuih Raya is definitely one of the best things to do during festive seasons. With that said, there’s nothing better than homemade Kuih Raya so here’s a recipe to try out: Kuih Bangkit Cheese.

Take Kuih Bangkit To A Whole New Level With This Recipe

We all know how delicious is Kuih Bangkit, especially its light, melt-in-your-mouth texture. Additionally, the fragrance of the coconut makes this traditional kuih even more irresistible. Ever wonder how we can elevate Kuih Bangkit without forsaking its traditional element? Well, here’s an idea, try incorporating cheese in them. It may be a little odd but it’s 2021 so give new things a go yeah?

Ingredients

  • Tapioca Flour (3 cups)
  • Corn Flour (3 cups)
  • Butter (1 block)
  • Cream Cheese (250g)
  • Cheddar cheese (1 block)
  • Fine granulated sugar (1 cup)
  • Egg yolks (2)
  • Baking powder (1 tsp)
  • Vanilla Essence (1 tsp)

Method 

  1. Mix tapioca flour, corn flour and baking powder in a bowl and leave aside
  2. Use a mixer and mix butter and sugar well. Then, add egg yolks, cream cheese, and vanilla essence and beat to soft peaks.
  3. Next, add in portion by portion of the mixed flour (in Step 1) and mix them well until they form a dough
  4. Knead the dough well (tip: the dough is well-knead if it doesn’t stick on your palms)
  5. Grate the cheddar cheese and then mix well with the dough then set aside
  6. Now, using the cover of a mineral bottle, press onto the dough until circles are formed
  7. Preheat oven to 170 degrees
  8. Bake for around 30 minutes until they turn golden-yellow and store them in a container
